This is one of my all time favourite.Green gram /Moong beans with green leaves.My mom used make with amaranth leaves or 'ponagakanni leaves.Since that leaves always rare in my kitchen,i used spinach.This gravy goes well with rice and chapattis too.


What You Need,


Green Gram-2cup
Spinach - chopped - 3 cup
Potato -2  cubed,small
Tomato - 1 chopped
Small onion- 6 
Ginger - 1 ,sliced
Garlic -6 pods- sliced
Turmeric powder-1/2 tsp
Cumin powder- 1tsp
Black pepper powder- 1/2 tsp
For tempering,
Mustard seeds- 1/4 tsp
Cumin seeds- 1/2 tsp
Fenugreek seeds- 1/4 tsp
Urad dal -1/4 tsp
Red dry chili- 3,
Curry leaves-1 spring
Coriander,1 tbsp chopped finely
Salt as taste
Oil - 2 tbsp


How I cook,


Pressure cook or cook in vessel , green gram/moong beans,turmeric powder,salt with some water.
Once its cook,mashed well to make it mushy, then add spinach ,potato ,tomatoes ,small onions,ginger slices ,garlic  slices,green chilies and add cumin seeds powder and black pepper powder and mix well.Add some water if its too thick and cook for few minutes or til the potato and spinach  are cooked.
Then in a kadai/pan ,heat oil add mustard seeds,cumin seeds,urad dal,and red chilies.Once the red chilies splutter,add curry leaves,coriander leaves and asofoetida.Cook for few minutes then throw in the moong beans gravy.
