Apam balik or known as Malaysian peanut pancakes is one of famous hawker snack Apam Balik in Malay language, is a pancake topped with butter, ground roasted peanut and creamy sweet corn and you can get everywhere in malaysia.You can make crispy version or thick version and you can your own fillings.This was always my favourite,when i found this recipe in myresipi blog,i make attempt to give a try..Let see what you need,
You Need,
Flour- 2 cup
Sugar-1/2 cup
Baking powder- 1tsp
Bicarbonate soda-1/4 tsp
Egg-1
Water- 1 1/2 cup
Roasted peanuts- ground coarsely
Sweetcorn
Butter
Sugar
How I make,
In a large mixing bowl,whisk egg with vanilla essence and sugar until sugar is dissolved.
Sift together self-raising flour with baking soda, baking powder and add into mixture in batches.
Set aside in fridge for 2-3 hours.
Heat non-stick pan on low heat,pour a ladle of batter into the pan,and swirl the pan full cover with batter.Put more batter if you want thick pancakes.
Once the pancake is done, drop in diced butter, sprinkle ground peanut and spoon over some creamy sweet corn.
Fold it over while it is hold, and cool (do not have to cool completely) on rack to prevent soggy bottom.
Cut into serving size and serve warm.

That sounds really yum... I don't remember tasting this though I love the kaya toasts :)
