Kway teow or flat noodles is a popular dish in Malaysia,Indonesia,Brunei and Singapore.And its typically known as street food ,since its been prepares ad stall food .It is made from flat rice noodles of approximately 1 cm about 0.5 cm in width, stir-fried over very high heat with light and dark soy sauce, chilli, belachan, prawns, cockles, bean sprouts and chopped Chinese chives and also with egg, fishcake, and less commonly with other ingredients and commonly served on a piece of banana leaf on a plate.Its was one of my favourite noodles.

Let see what you Need,

Flat noodles- 1packet,fresh
Prawns- 100g,shelled
Fishcakes-1 ,cut into small chunks
Mix stir fry veggie- 2 cup(bean sprouts,peppers,onions)
Chili paste/powder- 2 tbsp
Garlic -2 pods,minced
Egg -2

For Chili paste
Fresh Red chilies- 2 deseeded
Dry red chilies- 5 nos deseeded
Shallots- 2 ,peeled and sliced
Oil-1/4 tsp
Salt
Grind all together to smooth paste

For Sauce
Dark soy sauce - 1 tsp
Light soy sauce- 4 tsp
Sugar- 1/2 tsp

How I make,

Heat oil in pan, add garlic and cook until turn brown.Add prawn and fish cakes ,stir for 1 min or until cooked.
Now add the sauce mixture,stir fry mix,noodles and water and mix well.
Stirring constantly until the noodles tender and most of the liquid has been absorbed.
Then push the noodles to one side, and add a little oil on the middle and crack an egg on it. Use the spatula to break the egg yolk and stir to blend with the egg white. Flip the noodles and cover the egg, and wait for about 15 seconds.
Now remove the noodles from heat to a platter.Garnish with crushed geen chilies and spring onions.

    My favorite, but I haven't tried making this.Will make this,do you have any suggestions for substituting fish and prawns.As we do not eat those.
